there are different kinds of noodles in our country. in shanxi the most famous noodle is sliced noodles in guangdong it has dry fried noodles; in si chuan people love spicy hot noodles very much. born in beijing and live in beijing i love fried bean paste noodles the best.

the fired bean paste noodles is very easy to cook. first of it you should slice the cucumber into pieces cook the soy bean and green bean for about ten minutes then put these material in a bowl. second stir-frying the paste. mix the minced meat ginger and green onion and then put them in the pan keep frying the paste until you can smell the aroma. last put the paste onto the noodles you have prepare and add the cucumber soy bean and green bean to the noodles. the fried bean paste noodles are done. if you have time you can try this i sure you will love it.

中国菜以色、香、味、形俱佳而闻名中外。长期以来,广大人民群众利用各种丰富的物产,创造出多种多样的具有地方风味特色的菜肴和与之相适应的各种烹调方法,从而形成了中国独有的饮食文化。地方菜中比较的有京菜、川菜、粤菜、沪菜等,都有自己的特色。如京菜擅长炸、溜、爆、烤,菜肴取其脆、嫩,口味重于香鲜;川菜以干烧、干炒、鱼香、宫爆最为突出,菜肴入味,口味重于酸、辣、麻、香等。这些地方菜肴的不同风味特色,构成了我国烹调技术丰富多采的景象。

山西的面食甲天下,下面我就给大家介绍一下山西的特色,刀削面。

刀削面是山西人民日常喜食的面食,因其风味独特,驰名中外。刀削面全凭刀削,因此得名。用刀削出的面叶,中厚边薄。棱锋分明,形似柳叶;入口外滑内筋,软而不粘,越嚼越香,深受喜食面食者欢迎。它同北京的打卤面、山东的伊府面、河南的鱼焙面、四川的担担面,同称为五大面食名品,享有盛誉。

刀削而对和面的技术要求较严,水、面的比例,要求准确,一般是一斤面三两水,打成面穗,再揉成面团,然后用湿布蒙住,饧半小时后再揉,直到揉匀、揉软、揉光。如果揉面功夫不到,削时容易粘刀、断条。刀削面之妙妙在刀功。刀,一般不使用莱刀,要从特制的弧形削刀。操作时左手托住揉好的面团,右手持刀,手腕要灵,出力要平,用力要匀,对着汤锅,嚓、嚓、嚓,一刀赶一刀,削出的面叶儿,一叶连一叶,恰似流星赶月,在空中划出一道弧形白线,面叶落入汤锅,汤滚面翻,又象银鱼戏水,煞是好看,高明的厨师,每分钟能削二百刀左右,每个面叶的长度,恰好都是六寸。吃面前,能够参观厨师削面,无异于欣赏一次艺术表演。

关于“佛跳墙”这个名字还有一个小故事:清朝某寺院旁有一个聚春园酒家,一天大厨用山珍海味秘制的一道菜,做完时香传十里,禅僧闻得其香,竟不顾佛门戒律,放下木鱼,越墙前来觅食。故得其美名。

刚开始,我还不相信这个故事,可亲自品尝后才有所体会。有一次爷爷生日,我们到位于东街口的聚春园吃饭,爸爸特地点了佛跳墙,不一会儿,一个大坛子端了上来,服务员刚打开盖子,浓香四溢,久久没有散去。我不禁产生疑问:“这是用什么时候东西做的?一问才知道,原来是用鱼翅、海参、鲍鱼、干贝、火腿、鸡鸭、羊等十几种食材做主料,加之花菰、冬笋、绍酒、桂皮、姜片、白萝卜为辅料,经过蒸、炸、泡等几种方法烹制,封贮于坛中,食前用谷糠皮文火煨热,启坛时香传十里。我的天哪!这么多种食材,这么多道程序,我可要好好品尝一下闽菜的头把交椅——佛跳墙。

我连忙用勺子舀了一碗,鱼翅xx滑嫩,海参有嚼头……吃完后口齿留香,回味无穷,难怪寺中和尚越墙觅食。也难怪佛跳墙扬名海内外,来福州的中外游客,无不以品尝“佛跳墙”为乐。

打小我就喜欢喝奶奶煮的汤,奶奶煮的汤的种类有很多;有补充维c的西红柿鸡蛋汤,营养美味的骨头汤,滋补养颜的猪蹄汤……个个称的上人间美味的佳肴。

奶奶在厨房给我煮骨头汤,奶奶一大早就来到菜市场里买上等的骨头,奶奶买的骨头可是经过精心挑选的。奶奶买骨头的时候一定要看是不是正身的骨头,骨头有没有骨髓……奶奶在厨房里把肉剁块,焯水,微炒,放水,放入葱姜然后慢火扽上几个小时,过了一阵子厨房渐渐飘出骨头汤的香气,香气一点点浓郁起来,汤的香气如一只蝴蝶围绕在你身旁,锅里的骨油都熬了出来。冒着一些气泡,我的眼睛竟随着那浓浓的香气慢慢湿润了。这那里是一碗汤啊﹗这分明是奶奶对我的那份至浓至醇的爱啊﹗

奶奶端上来一碗浓香的汤,这碗汤看似平凡的不能在平凡,但在汤里包含了奶奶对我的爱。

伴着袅袅的汤香,我与奶奶话起家常,小时候看奶奶包饺子很好奇,

自己也想试一试,于是我学着奶奶的样子,拿起一个面皮这里面放菜,学着奶奶的样子一弯把饺子乱七八糟的包在了一起,把桌子弄得一团糟,害的奶奶收拾了半天,才把桌子收拾干净。给奶奶添了不少乱。听奶奶讲起这些我是又哭又笑。碗边的话像投进岁月长河的石子。淡然无了回声,清朗的如天上人间。急躁的人不理解汤的妙处。持久平和,才能熬出一碗好汤。
